Ingredients
- 1 cup cashews
- 1⁄4 cup hemp seed
- 1⁄4 cup ground flaxseed
- 1⁄2 cup vanilla protein powder
- 1 Tbsp coconut oil
- 3 Tbsp soaked Goji Berries
- Pinch of salt
- Optional – unsweetened coconut flakes
Preparation:
- Add first 4 ingredients to a food processor (or vitamix w/ a wide base)
- Blend into a chucky powder
- Add in coconut oil, drain goji berries and add 3 tablespoons and a pinch of salt. ( you can also add some coconut flakes if you like)
- Blend again until you have a smooth sticky dough
- Form 1 Tbsp of dough into round balls, makes about 16-18. Chill for at least 1 hour.
Tips:
- I used Thrive Market Organic Protein Powder
- Goji berries come dried and look like a pink raisin. But they are too hard to digest when eaten dried, they should be rehydrated before eating.
