● Pinch of salt
● Optional – unsweetened coconut flakes
Add first 4 ingredients to a food processor (or vitamix w/ a wide base)
Blend into a chucky powder
Add in coconut oil, drain goji berries and add 3 tablespoons and a pinch of salt. ( you can also add some coconut flakes if you like)
Blend again until you have a smooth sticky dough
Form 1 Tbsp of dough into round balls, makes about 16-18. Chill for at least 1 hour.
★ I used Thrive Market Organic Protein Powder
★ Goji berries come dried and look like a pink raisin. But they are too hard to digest when eaten dried, they should be rehydrated before eating.
