One of the first things we tend to abandon when we find ourselves in a tough situation is our diet. It’s so easy to go reaching for chips or cookies. I’m here to encourage you to take a little time to think about what you’re eating during unpredictable times.
This morning I made myself some lovely fried eggs in a pepper basket. Very easy, and so delicious. It’s a very simple base.
You just cut some rings from a bell pepper and put them in your pan, and then when the pan gets hot you crack an egg in each one. But, you can do so much more with them. This morning I chopped up some green onion, spinach and bacon. I put a bit of each into each ring and then cracked the egg on top and sprinkled with some salt and pepper. After a few minutes I flipped them. Note: if you want the egg to really stay in the rings, cut them thicker. I then topped it with a little cheese (naturally). After pulling them out of the pan, I added some avocado slices, and sprinkled the rest of my chopped green onion, spinach and bacon on top. Add a dash of your favorite hot sauce and some roasted sweet potato slices, and you’ve got a healthy and delicious breakfast.
