Bok Choy Bowl

I took a recipe from The PlantPowered Way and made it my own. And, I can’t stop eating it.

About 6 servings.


8 small heads bok toy
1 cup small brown mushrooms
1 teaspoon coconut oil
1/2 large lemon
Sea Salt to taste
2 tablespoons gluten free tamari
1 cup Quinoa (cook according to directions in advance)
1/4 cup raw pepitas (pumpkin seeds)


1. Slice the base off the bok choy bunches. Thoroughly rinse and open up the leaves.

2. In a wok or skillet, blacken or saute the bok choy over high heat using no oil. Turn and repeat on other side. Set aside when done.

3. In the same skillet, heat the coconut oil. Add mushrooms and saute until the juice is released. Remove from heat. Squeeze the lemon half over the mushrooms. Sprinkle with salt. Pour mushroom mix over bok choy.

4. Stir in pre made quinoa.

5. Garnish with pepitas.
